Pineapple-Sweet Potato Pie Recipe
3 or 4 large sweet potatoes
1/4 C. evaporated milk
2 t. vanilla
1/2 C. butter, melted
3 eggs, beaten
1 1/2 C. sugar
1 small can crushed pineapple, drained
1 (9-inch) unbaked pie shell
Boil sweet potatoes in clear water until tender. Peel potatoes while warm, put into a large bowl and mash.
Preheat oven to 350° F. To mashed potatoes, add remainder of ingredients except pie crust and stir well. Pour into unbaked pie crust. Bake for 45 minutes until light brown.
