Cheese Stuffed Baked Potatoes

4 medium potatoes
1 cup grated extra sharp cheddar
1/4 cup grated parmesan cheese
1/2 cup sour cream
1/4 cup unsalted butter
1/2 cup minced onion
2 large garlic cloves, minced
salt to taste

Preheat the oven to 400F. Bake the potatoes for 1 hour, or until done. Leave the oven on after you've taken out the potatoes. Split the potatoes in half lengthwise while they're still hot.

Carefully scrape the potato part into a large bowl, saving the skins.

To the potatoes, add the cheeses, sour cream, butter, onion and garlic. Mash everything well and add salt.

Stuff the potato skins and put them back into the oven for 15-20 minutes, or until the stuffing is freckled with little brown dots. Serve immediately.

Makes 8 half-potatoes.
