Rock Cornish Hens with Mincemeat Stuffing

2 rock Cornish game hens
1/4 cup of butter, melted
4 slices of whole wheat bread, cubed
3/4 cup of orange juice
1/2 cup of prepared mincemeat, drained
1/4 cup of diced celery
1/2 teaspoon of salt
1/2 teaspoon of freshly ground black pepper

Preheat your oven to 375�F. Remove giblets and necks from hens. Tuck neck skin under wings. Place the hens, breast side up, on rack in open roasting pan.

Roast hens, brushing occasionally with melted butter for 1 to 1 1/4 hours, or until a leg can be moved up and down easily.

To make stuffing, combine the bread cubes, orange juice, mincemeat, celery, salt and pepper in 1 quart casserole dish, toss gently.

Bake stuffing along with hens for the last 30 minutes of cooking time. Transfer the hens to a serving platter. Serve with mincemeat stuffing.
