Spinach Stuffing Balls

1 3/4 cups stuffing mix
2 (10-ounce) packages frozen, chopped spinach, cooked and drained well
1 medium onion, chopped
2 eggs, beaten
3/4 cup butter, melted
1/2 cup freshly grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon thyme
1 teaspoon salt
1/2 teaspoon pepper

Preheat oven to 350*F (175*C). Lightly greased baking sheet.

Combine all ingredients. Use an ice cream scoop to form mixture into balls. Place balls on prepared baking sheet. Bake for 20 to 25 minutes.

These may be frozen before baking and stored in the freezer for 2 to 3 weeks.

Serves 8.
