Bite Size Almond Chocolate Brownies Recipe
1 3/4 C. plus 2 T. almond paste
7 T. (scant 1/2 cup) cocoa powder
9 T. butter, melted
Preheat oven to 350°F.
Butter and flour mini muffin tins, or line them with paper liners.
In the bowl of a standing mixer fitted with the paddle attachment, mix the almond paste. Gradually add the eggs, it is important to add them one at a time. Add the cocoa powder. Then, warm the melted butter and add it to the mixture. Blend the ingredients until completely combined.
Fill the muffin tins, leaving about 1/8 inch on top of the batter. Bake until slightly puffed and a thin crust has formed. Take care not to over bake, or the brownies will be dry.
Yield: 12 to 16 servings
