Cherry Delight Recipe
2 C. white sugar
16 large marshmallows
2/3 C. evaporated milk
2 t. vanilla
1 10-oz. package cherry chips
Topping:
1 oz. chocolate chips
3/4 C. chunky peanut butter
1 C. chopped peanuts
Mix sugar, marshmallows and milk together and cook until dissolved. After it
begins to bubble, cook five minutes, stirring constantly. Remove from heat and
stir in vanilla and cherry chips (like chocolate chips). After thoroughly
dissolved, pour into buttered 9- by 13-inch pan.
Make topping:
Melt chocolate chips and peanut butter in double boiler until smooth. Stir in
peanuts. Pour topping over cherry mixture, cover with foil and chill.
Note: You can also make two batches of topping and put one batch in the bottom
of dish, then cherry mixture, then top again.
Cut in squares and serve on decorative dish.
Makes about 24 squares.
