Old Fashioned Pecan Penuche 

1 cup evaporated milk
2 1/2 cups light brown sugar
2 cups sugar
1/2 cup butter
1/4 teaspoon salt
1 1/2 teaspoons vanilla
1 1/2 cups chopped pecans

In a heavy 3-quart saucepan, combine milk, sugars, butter and salt. Cook, stirring only until sugar is dissolved. Continue cooking to 238 F.

Remove from heat and let stand until lukewarm (110ƒ). Add vanilla and beat until mixture begins to thicken. Add pecans and beat until candy loses its gloss.

Pour into buttered 9-inch square pan. When firm, cut into squares.

Yield 2 1/2 pounds
