Old Fashioned Pecan Penuche 

1 cup evaporated milk
2 1/2 cups light brown sugar
2 cups sugar
1/2 cup butter
1/4 teaspoon salt
1 1/2 teaspoons vanilla
1 1/2 cups chopped pecans

In a heavy 3-quart saucepan, combine milk, sugars, butter and salt. Cook, stirring only until sugar is dissolved. Continue cooking to 238 F.

Remove from heat and let stand until lukewarm (110�). Add vanilla and beat until mixture begins to thicken. Add pecans and beat until candy loses its gloss.

Pour into buttered 9-inch square pan. When firm, cut into squares.

Yield 2 1/2 pounds
