Pecan Butter Fudge Recipe
3 T. butter
1/2 C. heavy cream
2 1/2 C. sugar
6 T. unsweetened cocoa
1 t. vanilla
2/3 C. pecan pieces
Butter a 9 inch square baking pan. Place the butter and cream in a pan over low heat. Stir until the butter has melted.
Add the sugar, cocoa and salt. Stir continuously until the mixture comes to a slow rolling boil. Then stir for another 8 minutes. Have a cold cup of water ready and drop a bit of the mixture into it. It should form a medium-firm ball. If it seems a bit soft, cook for another 2 minutes and test again.
Remove the fudge from the heat. Stir in the vanilla and pecans. Continue to beat until the fudge thickens to the consistency of sluggish molasses. Quickly pour into the buttered pan. Chill until firm. Cut into squares and serve.
