Ginger Marsala Fruit Salad
1/4 cup Marsala cooking wine
1 good sized chunk fresh ginger root, grated
1 tablespoon vegan cream cheese
1 tablespoon vegan sour cream
1 15.4 ounce can crushed pineapple, drained
1 good sized granny smith apple, peeled and chopped
1/4 cup dark raisins
1 large banana, sliced, then halved
1 tablespoon flax seed meal
crystallized ginger strips, for garnish
optional: walnuts, candied cherries
In a small saucepan on low heat, simmer 1.5 and ginger about 5 to 7 minutes.
Add the vegan sour cream and cream cheese, mix well into the
