2 large yams
3 tablespoons margarine
1 1/2 tablespoons brown sugar
cinnamon to taste
nutmeg to taste
1/2 cup orange juice or 1/2 cup crushed pineapple or 1/4 cup each
salt to taste
Boil or bake the yams until soft. Remove the skins. Mash all the remaining
ingredients into the potatoes. Serve.
Note: If you want a slightly more sweet or festive dish, put
the mashed yams in a casserole dish, cover with a layer of vegan marshmallows
and bake at 350F until the marshmallows on top turn a light gold color.
