Crispy Waffles

2 cups cake flour

1 teaspoon soda

3 teaspoons sugar

1 teaspoon salt

2 eggs, separated

1/4 cup white vinegar

2 cups milk

4 tablespoons melted Crisco

Beat egg whites until a soft peak. Set aside.

With same beaters, beat egg yolks until lemon-colored. Add vinegar and milk to yolks, beat. Add dry ingredients, beat 10 seconds. Add melted Crisco. Blend all for 15 seconds.

Fold in stiffly beaten egg whites.

Bake on hot Belgium waffle iron.

Yield 12 Belgium waffles.
