Mint Angel Food Cake
1 angel food cake
2 1/4 C. miniature marshmallows
1/2 C. milk
1/4 C. white or green creme de menthe
1/4 t. salt
4-6 drops of green food coloring
1 pint whipping cream
1 packet (1oz.) pre-melted unsweetened chocolate.
Split cake into 3 equal parts, horizontally.
Heat marshmallows and milk over medium heat, stirring occasionally until melted,
about 5 minutes.
Remove from heat, cool at room temp. until thickened (20-25 minutes).
Stir in creme de menthe, salt and food coloring.
Beat whipping cream in chilled mixer bowl until stiff peaks form. Fold in
Stack cake layers frosting each with 1 C. of filling. Frost sides with remaining
Drizzle chocolate around top edge of cake allowing it to run down sides. Chill.
