Angel Food Cake with Orange Pineapple Filling
1 prepared angel food cake
1 can mandarin oranges
1 large pkg. instant vanilla pudding (sugar-free will work)
1/4 c. orange juice
1/2 c. crushed pineapple
1 medium-size carton fat-free Cool Whip
1/2 c. finely grated coconut
Split the cake in half horizontally. Combine remaining ingredients, except
coconut, to make filling.
Spread the bottom portion of the cake with half of the filling. Cover with the
top half of the cake.
Top with the remaining filling and sprinkle with coconut. Chill the cake in the
refrigerator before serving. Refrigerate leftovers.
