Beef Pinwheels

8 slices deli roast beef

4 10" flour tortillas

8 oz cream cheese soft

2 Tbls. ranch seasoning

1 cup finely shredded lettuce

1/2 cup grated onion

1/2 cup grated carrot

1 cup shredded monterey jack cheese

Mix cream cheese with the ranch seasoning.

Spread on tortillas.

Layer remaining ingredients. Start with the roast beef.

Roll into tight logs and wrap in plastic.

Chill 8 hours.

Slice and serve on a bed of lettuce.
