Cranberry Cheese Roll-ups
4 ounces cream cheese
4 ounces crumbled feta cheese
1/4 cup dried cranberries
1/3 cup chopped fresh spinach leaves
1/4 cup chopped pecans
2 tortillas
Bring the cream cheese to room temperature. Blend the cream cheese and feta
cheese together. Stir in the cranberries, spinach and pecans. Spread half the
mixture on one of the tortillas. Roll tightly and wrap with plastic wrap. Repeat
with the second tortilla. Chill for at least 3 hours. Slice into rounds before
serving.
Can be kept in the refrigerator up to 3 days. |
