Grilled Salmon with Cilantro Butter
6 Tbsp butter, at room temperature
2 Tbsp chopped fresh cilantro
2 Tbsp finely chopped tomato
2 tsp minced garlic
1/4 tsp pepper
1/8 tsp salt
4 salmon fillets, about 6 oz. each
In small bowl, combine butter, cilantro, tomato, garlic, pepper and
salt. Mix well.
Melt 2 tablespoons of the butter mixture and brush over both sides
of each salmon fillet. Next, refrigerate remaining butter mixture.
Grill salmon over medium heat for 4 to 5 minutes per side, or until
fish flakes easily with a fork.
Serve immediately, topping each fillet with equal amounts of
remaining cilantro butter. Serve with your choice salsa and corn on
the cob.
