Taco Pie
1 1/2 pounds ground beef (3 3/4 cups browned)
1/3 cup finely chopped onion (1/4 cup sauteed)
1 envelope taco seasoning mix
1 4 oz can diced green chilies, drained
1 cup milk
1 cup bisquick mix
2 eggs
1 cup grated mild cheddar cheese
1 8 oz sour cream*
1 chopped tomato*
shredded lettuce to garnish
---*Do not freeze these items, but have them at time of serving.
In a large skillet, cook and stir ground beef and onion until brown and drain.
Combine with taco seasoning mix and 3/4 of cheese and spread in a 10" pie plate.
Sprinkle with chilies. Beat milk, bisquick and eggs. Pour over beef in pie
plate. Cover with foil and freeze. (attach rest of cheese in baggie to the
recipe).
To serve, thaw pie. Bake uncovered in a preheated 400�F for 35 minutes. Top at
end with rest of cheese. To serve, top a wedge with a spoonful of sour cream,
shredded lettuce and the chopped tomatoes. Makes 6 to 8 servings.
Serve with Guacamole dip with tortilla chips and a fruit salad. |
