Steaks With Chipotle-Garlic Chile Butter
4 1- to 11/2-inch-thick sirloin or New York steaks (10 to 12
ounces each)
4 T. unsalted butter, softened (1/2 stick)
1 canned chipotle chile in adobo sauce, finely chopped
1 t. adobo sauce from canned chipotle chilies
1 clove garlic, peeled
Salt and black pepper
Preheat the grill. Meanwhile, prepare the steaks and chile butter. Trim excess
fat from the steaks and set them aside at room temperature. Put the unsalted
butter, chipotle chile and adobo sauce in a mixing bowl. Press the garlic clove
through a garlic press and into the bowl. Using a fork, mash together the
ingredients. Set aside.
Carefully oil the grill rack. Season the steaks generously with salt and black
pepper to taste. Place the steaks on the grill and cook, turning once, until
done to your liking, 14 to 18 minutes for medium. Transfer the steaks to serving
plates and immediately top each with a dollop of the chile butter.
