Red Raspberry Salad 2 (4 serv.) pkg. sugar free raspberry
gelatin
2 C boiling water
2 1/4 C frozen red raspberries (no sugar added)
1 1/2 C unsweetened applesauce
3/4 C plain fat free yogurt
1/3 C nonfat dry milk powder
Sugar substitute to equal 1 T. sugar
1/2 C. cool whip lite
1/4 tsp vanilla extract
1 C miniature marshmallows
Combine dry gelatin with boiling water. Mix well to dissolve
gelatin. Cool 5 minutes
Blend in raspberries and applesauce. Pour into 9x13 in. dish.
Refrigerate until set, about 4 hours.
Combine yogurt and dry milk powder in small bowl. Blend in sugar
substitute, Cool Whip Lite, and vanilla. Fold in marshmallows.
Spread mixture evenly on top of set gelatin mixture
Refrigerate until ready to serve. When serving, cut into 8 pieces. |
