Strawberry Margarita Pie
6 large egg yolks
1/2 cup granulated sugar
1/8 tsp salt
1/2 cup lime juice
1 Tbsp grated lime peel
1/4 cup margarita mix
1 Tbsp orange liqueur
2 Tbsp tequila (if desired)
2 tsp cornstarch
1 cup whipping cream
1 prepared graham cracker crumb crust
Strawberry slices and lime slices for garnish
In a small saucepan, whisk together egg yolks, sugar, salt, lime
juice, lime peel, margarita mix, orange liqueur, tequila (if used),
and cornstarch. Cook over moderate heat, whisking constantly until
thickened. Do not boil. Remove from heat and allow to cool.
Whip the cream until stiff. Fold into custard and spoon into the
prepared graham cracker crust. Refrigerate until firm.
Garnish with sliced strawberries and lime slices. |
