Strawberry Muffins
1 1/2 cups all purpose flour
1 cup whole wheat flour
2/3 cup sugar
1 teaspoon baking soda
3/4 teaspoon cinnamon
1/2 teaspoon salt
2 cups sliced fresh strawberries
1 1/2 teaspoons vanilla
1/3 cup egg substitute
1/3 cup applesauce
1 cup reduced fat buttermilk
Blend dry ingredients in a bowl and stir in strawberries; set aside.
Mix vanilla, egg substitute, applesauce and buttermilk in a large
bowl; fold in dry ingredients until just moistened. Divide evenly
into muffin tins sprayed with nonstick cooking spray. Bake at 350
degrees for about 25 minutes, or until lightly browned and an
inserted toothpick comes out clean.
