Black Bottom Cupcakes
1 cup cream cheese (8 oz.)
1/3 cup sugar
1 egg
1/8 tsp. salt
1 pkg. chocolate chips (6 ounce)
2 1/4 cups flour
1 1/2 cups sugar
1/4 cup + 2 Tbls. cocoa
1 1/2 tsp. soda
3/4 tsp. salt
1 1/2 cup water
1/3 cup + 2 Tbls. oil
1 1/2 tsp. vanilla
Beat cream cheese, sugar, egg, salt until smooth. Add chocolate
chips. Set aside. Sift flour, sugar, cocoa, soda and salt in a large
bowl. Add water, oil and vanilla and mix until smooth. Fill paper
muffin cups 1/3 full of chocolate batter. Top each with a heaping
tsp. of cheese mixture. Bake at 350 degrees for 30 minutes. |
