Carrot Cake 1 pkg Classic
Yellow Cake Mix
2 cups fresh grated carrots
1 (8 oz) can crushed pineapple with juice, undrained
1/2 cup water
3 large eggs
1/2 cup vegetable oil
1/2 cup finely chopped pecans
2 teaspoon ground cinnamon
1 tub Creamy Home-Style Cream Cheese Frosting
Preheat oven to 350 degrees. Grease and flour 13x9-inch pan. Combine
cake mix, carrots, pineapple, with juice, water, eggs, oil, pecans,
and cinnamon in large mixing bowl. Beat at low speed with electric
mixer until moistened. Beat at medium speed for 2 minutes. Pour into
prepared pan.
Bake 35 to 40 minutes or until toothpick inserted in center comes
out clean. Cool in pan. Spread frosting on cooled cake. Refrigerate
until ready to serve.
Makes 12 to 16 servings.
