Pineapple Brownies
1 1/2 cups sifted flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
3/4 cup butter or margarine, softened
1 1/2 cups sugar
3 eggs
1 tsp vanilla extract
1 cup crushed pineapple, well drained
2 squares (2 oz) chocolate (didn't specify semi-sweet, bittersweet or
unsweetened), melted and cooled
1/2 cup coarsely chopped walnuts or pecans
Preheat oven to 375.
Sift together dry ingredients into a bowl. In a separate bowl, cream butter and
sugar. Add the 3 eggs, one at a time, plus the vanilla. Beat well.
Blend in dry ingredients. Place one cup of the dough into another bowl. Add 1
cup crushed pineapple and mix well. Add the melted and cooled chocolate and the
chopped nuts to the rest of the dough. Mix well.
Spread about 1 1/2 cups chocolate dough in a well-greased 12x8x2 pan. Cover with
the pineapple dough. Drop remaining dough by spoonfuls and spread carefully to
cover.
Bake at 375 for 45-50 minutes. Cool and cut into bars.
Makes about 2 1/2 dozen bars
