Quick Beef Casserole
Drain the fat from the cooked beef to lower the amount of fat and calories.
1/2 lb. lean ground beef
1 C. onion, chopped
1 C. celery, chopped
1 C. green pepper, cubed
3 1/2 C. tomatoes, diced
1/4 t. salt
1/2 t. black pepper
1/4 t. paprika
1 C. frozen peas
2 small carrots, diced
1 C. uncooked rice
1 1/2 C. water
In skillet, brown ground beef and drain off fat. Add rest of ingredients. Mix
well. Cook over medium heat and cover skillet until boiling. Reduce to low heat
and simmer 35 minutes. Serve hot.
