Lemon Cheesecake Squares
Just got the new issue of Taste of Home and tried this yesterday. A cross
between cheesecake and bars.
3/4 c shortening ( I used butter)
1/3 c packed brown sugar
1 1/4 c flour
1 c rolled oats
1/4 tsp. salt
1/2 cup seedless raspberry jam ( I used a bit more)
Filling:
4 pkgs. (8 oz.) cream cheese, softened
1 1/2 c sugar ( I used a little less)
1/4 c flour
4 eggs
1/3 c lemon juice ( I used a bit more)
4 tsp. grated lemon peel
Cream shortening and sugar. Add flour, oats and salt. Press dough into a greased
13 X 9 X 2" pan. Bake at 350 for 15-18 min. or until golden. Spread with the
jam.
For the filling, beat cream cheese, sugar, and flour. Add
eggs, juice, and peel. Spoon over jam and return to oven (350) for 30-35 minutes
or until center is almost set. Cool. Store in refrige.
