Kielbasa Cabbage Soup
2 T. olive oil
2 lbs. kielbasa, sliced
1 large onion, chopped
3 sliced carrots
1 can (28 oz.) chopped tomatoes
3 potatoes, peeled and cubed
8 C. beef broth
1 T. brown sugar
1 to 2 T. paprika
2 t. caraway seeds
Garlic salt and pepper to taste
3 C. shredded cabbage
1 1/2 cups dry noodles
Heat the oil in a skillet and add the sliced kielbasa and the onions. Stir-fry
over medium high heat until onions begin to brown. Add contents of the skillet
into a large soup pot. Add the carrots, tomatoes, potatoes, broth, brown sugar,
paprika, caraway seeds, garlic salt and pepper. Bring to a boil, then reduce
heat and simmer for an hour.
Add the cabbage and continue cooking 15 minutes.
Cook the noodles in boiling salted water, drain, then add to the soup.
