Cherry Coffee Cake
1/2 c (1 stick) margarine, softened
1 c. granulated sugar
2 eggs
1 c sour cream
2 c all-purpose flour
1/2 t. salt
1/2 t baking soda
1 1/2 t. baking powder
1 t. Vanilla extract
1 21 oz. can cherry pie filling
In a large bowl, combine margarine and sugar and beat until creamy. Whisk in
eggs and sour cream. Sift together flour, salt, baking soda and baking powder.
Gradually add the dry ingredients to the cream mixture. Beat well after each
addition. Add vanilla.
Pour half the batter into a prepared 13x9 inch greased and floured pan. Pour the
cherry pie filling over the batter, followed by the remainder of the batter over
the filling. Sprinkle with topping; bake at 350 degrees for 50 minutes or until
a toothpick inserted in center comes out clean.
