Kona Coast Macadamia Cookies

1 1/2 cups sifted whole wheat flour

1/2 teaspoon baking soda

1 1/3 cups packed brown sugar

2/3 cup unsalted butter

1/4 teaspoon salt

2 eggs

1 teaspoon vanilla extract

1 tablespoon instant espresso powder

3 (1 ounce) squares unsweetened chocolate

3/4 cup halved macadamia nuts 

1 Preheat oven to 350 degrees F. Grease cookie sheets.

2 Cream butter and brown sugar. Add the eggs, one at a time, beating well after each addition. Beat in espresso and vanilla. Mix until well blended.

3 Slowly sift in whole wheat flour, baking soda and salt.

4 Melt chocolate in double boiler over low heat. Let cool to room temperature. Stir into mixture. Add in nuts and mix until well blended.

5 Drop 3 inches apart on cookie sheets and bake for 12 minutes or until crisp around edges.
