Melting Moments
COOKIE:
1 cup unsalted butter, room temperature
1/3 cup powdered sugar
3/4 cup cornstarch
1 cup flour
GLAZE:
1 cup powdered sugar
1 tablespoon unsalted butter, room temperature
1 tablespoon fresh lemon juice
1 tablespoon orange juice
To make cookies: Place butter and sugar in bowl of a mixer fitted with a paddle
and mix until smooth. Scrape down the sides of the bowl, add the cornstarch and
flour, and mix until well combined. Cover with waxed paper or plastic wrap and
refrigerate at least 3-4 hours, or freeze up to 2 weeks. Preheat the oven to
350�F. Lightly grease a cookie sheet and line with parchment paper.
To form the cookies, break off small pieces and roll into 1" balls. Place balls
on prepared cookie sheet and flatten with a hand. Transfer to the oven and bake
until the cookies are just starting to color, about 10-12 minutes. Cool on the
cookie sheet; cookies are quite delicate. For glaze: Place powdered sugar and
butter in a bowl and beat until smooth. Gradually add the lemon juice and orange
juice, beating until smooth. dab a little on each cooled cookie. Makes 2 dozen. |
