Soft Oatmeal Cookies
2 cups packed brown sugar
1 cup shortening
3 eggs
3 cups flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup sour milk
2 cups rolled oats
1 cup raisins
1 cup chopped walnuts
In a large mixing bowl, cream sugar and shortening. Add eggs, one at a time,
beating well after each addition. Combine flour, salt, baking powder, soda and
cinnamon; add alternately with milk to the creamed mixture. Stir in oats,
raisins and nuts. Drop by heaping tablespoonfuls onto greased cookie sheets.
Bake at 350�F for about 12 minutes or until lightly browned. Remove to a cooling
rack. Makes about 5 dozen. Note: to sour milk, place 1 tbl. white vinegar in a
measuring cup; add enough milk to equal 1 cup.) |
