Velvety Lime Squares
1 3 oz can flaked coconut
2 cups vanilla water crumbs
2 T melted butter
2 T sugar
2 3 oz pkgs lime gelatin
2 cups boiling water
1 6 oz can frozen limeade concentrate
3 pints vanilla ice cream, softened
few drops green food coloring
Carefully toast 1/2 cup coconut in 375� oven until lightly browned, about 5
minutes. Set aside. Combine remaining coconut, vanilla wafer crumbs, butter and
sugar; lightly press into a 7 x 11 pan. Bake at 375� for 6-7 minutes, cool.
Dissolve gelatin in boiling water. Add limeade, ice cream, salt and food
coloring and stir until dissolved. Pour into baked crust. Top with reserved
coconut. Cover tightly and freeze until firm. Remove from freezer 20 minutes
before cutting into squares.
