Aunt Lizzie's Doughnut Holes
1 cup sugar
3 eggs, beaten
6 tbsp. lard*, melted
1-1/2 tsp. vanilla
3 cups all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 tsp. ground nutmeg
1 cup buttermilk
Beat together the sugar, eggs, lard* and vanilla.
Add sifted dry ingredients to the first mixture alternately with buttermilk.
Then drop "scanty" teaspoonsfuls* of the batter, a few at a time, in 375�F. hot
fat; turn them once. Drain on paper towels and roll in granulated sugar.
Makes about 4 dozen doughnut holes
Note: *Vegetable shortening or any cooking oil except olive oil should be
alright.
These take awhile, and should be about the size of ping-pong balls.
