The Kernwood's Delmonico Potatoes
5 lbs. all-purpose potatoes
1 pt. light cream
Salt and white pepper, to taste
1 c. shredded white cheddar cheese
Paprika, for garnish (optional)cw-2Peel the potatoes. Place in a
saucepan with water to cover. Bring to a boil and let boil until
cooked through, but not falling apart. (The potatoes should remain
whole.) Let cool and place in the refrigerator overnight, or until
well chilled.
In a large mixing bowl, break up the potatoes with a masher or by
hand. Add the light cream and keep mashing to combine. Add the salt
and pepper.
Place the potatoes in a 9-by-13-inch baking pan. Smooth the top.
Sprinkle with the cheese. Garnish with paprika, if using.
Bake at 350 degrees for 30-40 minutes, until the top is golden brown
and the edges are bubbling.
