Omelet O'Brien In the same skillet, melt remaining butter. In a bowl, beat eggs, milk, salt and pepper; add to skillet and cook over medium heat. As the eggs set, lift edges, letting uncooked portion flow underneath. When eggs are set, spoon the hot potatoes on top. Garnish with cheese, green onions and bacon bits. Cut into wedges.
Yield: 4-6 servings.
