Italian Chocolate-chip Cannoli Pie
12 ounces low-fat pot cheese, (dry cottage cheese)
2 eggs
1/2 cup white creme de cacao liqueur
1/4 cup sugar substitute, (to equal 1/4 cup sugar)
1/4 teaspoon bottled orange peel, optional
2 egg whites
1/8 teaspoon salt
3 tablespoons miniature chocolate chips
graham-cracker pie shell
Combine first 5 ingredients in blender; cover and beat smooth. Meanwhile,
combine egg whites and salt in a nonplastic mixer bowl; beat stiff with an
electric mixer. Gently but thoroughly fold in the cheese mixture; then gently
fold in chocolate chips. Spoon into pie shell and bake in a preheated 325 oven 1
hour. Chill before serving. |
