Smothered Stuffed Chicken
(Nadziewane Kurczatko Duszone)

1 chicken, about 3 pounds
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter
1 1/4 cups dry bread cubes or pieces
1/4 cup chopped onion
1/2 teaspoon dill weed
1/4 cup hot milk
1/3 cup butter, melted

Sprinkle inside of chicken with salt and pepper. Tuck wing tips underneath wings. Chop liver.

Saute liver in 2 tablespoons butter 2 minutes. Add bread cubes, onion, dill and milk; mix.

Stuff chicken. Close and secure with poultry pins. Place in a earthenware or ceramic casserole.

Pour melted butter over chicken. Cover.

Bake at 350 degrees about 1 hour, or until chicken is tender.

If desired, remove cover. Baste. Increase temperature to 450 degrees. Bake 10 minutes to brown.

Serves 4 to 6
