Steak with "Roasted" Garlic Sauce

1 teaspoon olive oil
2 small whole heads garlic
1/4 cup butter
1 1/2 pounds sirloin steak
1/4 teaspoon salt
1/4 teaspoon pepper
8 ounces sliced mushrooms
1 tablespoon all-purpose flour
1/4 cup dry red wine
1 cup beef broth
1/3 cup heavy cream

Rub oil on garlic. Place on microwave safe plate. Cover with plastic wrap. Microwave at HIGH (100%) for 5 minutes. Let stand 5 minutes. Cut off tops. Squeeze skins, pushing out pulp. Mash. Heat 2 tablespoons butter in cast-iron skillet over medium-high heat. Season steak with salt and pepper. Add to skillet; cook 6 to 8 minutes; turn over. Cook 6 to 8 minutes, until internal temperature registers 145�F for medium-rare. Transfer to platter; keep warm.

Reduce skillet heat to medium. Add mushrooms; cook, stirring, 5 minutes or until they release their liquid. Sprinkle with flour; stir to mix. Add red wine and cook 2 minutes. Add "roasted" garlic and beef broth; bring to a rapid simmer, 5 minutes or until thickened. Add heavy cream; gently bring to simmering. Remove from heat. Stir in remaining butter. Slice steak; top with mushroom-garlic sauce. Serve with green beans and onion rings, if desired.

Serves 6.
