Strawberry Tuxedos

8 oz. quality semisweet or bittersweet chocolate, finely chopped
8 oz. white chocolate, finely chopped
1 lb large strawberries (about 20), washed and dried well

1/3 cup almonds, sliced
1/4 cup coconut, shredded
1/4 cup macadamia nuts, crushed
1/8 cup colored sprinkles

In a small saucepan, bring water to a boil. When the water boils, turn off the heat. Place semisweet or bittersweet chocolate in a heatproof bowl and place it on top of the hot water. This is called a double broiler. It enables the chocolate to melt slow so it won't burn or overcook. Stir the chocolate occasionally as it melts. Food Guru Tip: The microwave is a bad place for good chocolate. Place the white chocolate in a separate double boiler over barely simmering water and melt while stirring.

Once both chocolates are melted and smooth, remove from the heat. Line a sheet pan with parchment or waxed paper. Grasp the stem or green leaves of the strawberry and dip into the semisweet chocolate, twisting as it is lifted out. Let the excess chocolate drip off and place on the parchment paper. Sprinkle with sliced almonds, coconut, crushed macadamia nuts or colored sprinkles if desired. Repeat with the rest of the strawberries.

Dip a fork in the white chocolate. Hold the fork over the chocolate covered strawberries and quickly shake it back and forth to create lines of white chocolate on the semisweet chocolate. Set the strawberries aside to allow the chocolate to harden, about 30 minutes.

Dip the strawberries all the way to the top in white chocolate, and cool them in the refrigerator for a minute or two. Then re-dip the berries in dark chocolate on an angle. First one side, then the other to create a V-Shape. Use a chocolate filled pastry bag and make a few dots for buttons and then a bowtie.

Strawberries should not be stored in refrigerator longer than 1 hour as condensation drops may collect on the chocolate.
