Tamale Loaf
1 onion, minced
1 Tbsp. olive oil
1 lb. ground beef
1 egg
1/2 cup cornmeal
1/2 cup milk
1 tsp. powdered chiles (we used chipotle)
1 14-1/2 oz. can diced tomatoes
1 15-1/2 oz. can corn
1 cup pitted ripe olives, chopped
salt
1/2 cup grated Cheddar cheese
Saute onion in oil in large skillet over medium heat. Add meat and saute,
breaking up with a spoon, until browned. Drain and let cool.
Beat egg in mixing bowl. Add cornmeal, milk and chile powder and mix well. Add
tomatoes (undrained), corn, olives and meat mixture. Season to taste with salt
if desired. Spoon into lightly greased casserole. Sprinkle top with grated
cheese.
Bake for approximately 1-1/4 hour or until center is completely cooked. Cool
slightly before serving.
