Cantaloupe and Chicken Salad
1 medium cantaloupe -- cubed
2 cups chicken -- cooked and cubed
1 1/2 cups blueberries
1 cup sliced celery
1 cup green grapes -- cut in halves
1/2 cup sliced almonds Dressing
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon fresh lemon juice
1 1/2 teaspoons lemon peel
1 1/2 teaspoons sugar
1/2 teaspoon ground ginger
1/4 teaspoon salt
dash pepper
lettuce leaves
Mix chicken, celery, green grapes. Mix together dressing ingredients.
Toss the chicken with the dressing. Chill until ready to use.
Put chicken salad on a bed of lettuce.
Sprinkle with almonds and berries. |
