Festive Tossed Salad
1 Cup coarsely chopped walnuts
3 Tbsp. butter or margarine
1/4 cup sugar
1 tsp. coarsely ground pepper
1/4 tsp. salt
12 Cups torn mixed greens
3/4 Cup dried cranberries
4 oz. crumbled feta or blue cheese
Dressing:
1/4 Cup red wine vinegar
1/4 Cup vegetable oil
1/2 loosely packed parsley sprigs
1/4 Cup chopped red onion
2 cloves of garlic
Sugar to taste
Candied nuts: Melt butter in saute pan. Add sugar to dissolve then add
walnuts, mix until walnuts are coated let cool. Mix dressing
ingredients. Mix greens, cranberries, feta or blue cheese, cooled nuts.
Pour dressing over, mix and serve. |
