Greek Orzo Salad

2 cups orzo
12 T Olive Oil
10 T Red Wine Vinegar
1 lg. red onions, minced
3 t salt
2 t dried oregano
1 t pepper
� c minced parsley
3 tomatoes, diced
1 cucumber, diced
12 oz. feta

In a medium saucepan bring 2 quarts water to a boil. Add orzo and cook approx. 8-10 min.. Drain, place in 2 quart serving dish and toss with 1 T olive oil.

Whisk together remaining oil and vinegar. Add to orzo. Then add onion, salt, pepper, oregano, and parsley. Let marinate for 2-24 hours.

At serving time toss in tomatoes, cucumber and feta.

Makes approx. 10 cups.
