Roaster Potato Salad
4 cups small red potatoes, quartered & unpeeled
Dressing:
1 cup Miracle Whip
6 slices bacon, chopped & cooked crisp
4 eggs, hard boiled & sliced
1/4 cup green onions, sliced
Salt & pepper, to taste
Place the potatoes on a 9 x 12-inch baking sheet that has been spray
with cooking spray. Bake at 425-degrees for 30 to 35 minutes, or until
fork tender, stirring once.
Combine all of the dressing ingredients and mix well.
Toss with the potatoes.
Serve warm or cold. |
