Chocolate Almond Truffles
1 package semisweet chocolate morsels (6-ounce)
3 tablespoons butter or margarine
3 tablespoons powdered sugar
2 egg yolks
24 whole toasted almonds
1/2 cup finely chopped almonds
Place chocolate morsels in top of a double boiler; bring water to a
boil. Reduce heat to low; cook until chocolate melts. Add butter and
powdered sugar, stirring until sugar dissolves. Remove from heat.
Add egg yolks, one at a time, beating with an electric mixer after
each addition. Pour mixture into a bowl; cover and let sit 12 hours
in a cool, dry place (do not refrigerate). Shape mixture into 1-inch
balls; insert 1 whole almond in center of each ball. Roll lightly in
chopped almonds. Yield: 2 dozen.
MICROWAVE DIRECTIONS: Place chocolate morsels in a 1-quart glass
bowl. Microwave at MEDIUM (50% power) for 2 to 3 minutes or until
chocolate is softened; stir well. Add butter and powdered sugar,
stirring until powdered sugar dissolves. Add egg yolks, one at a
time, beating with an electric mixer after each addition. Pour
mixture into a bowl; cover and let sit 12 hours in a cool, dry place
(do not refrigerate). Shape mixture into 1-inch balls; insert 1
whole almond in center of each ball. Roll lightly in chopped
almonds.
