Coconut Delight Candy Bars
3 c Light corn syrup
1/4 t Salt
1 c Water
2 c Sugar
5 2/3 c Coconut flakes
3/4 c Candied fruit -- chopped
(cherries and pineapple)
3/4 c Raisins
3/4 c Pecans -- chopped
Milk chocolate
In a saucepan combine corn syrup, salt, water and sugar. Cover
tightly and bring to a boil. Remove lid and place a candy
thermometer inside; cook to 236 degrees. Place coconut, candied
fruit, raisins and pecans in a large bowl and mix well. Pour cooked
syrup over fruit and nuts; mix thoroughly. Pour out on buttered
marble slab and pack into a 3/8-inch thick square shape. Cool, slice
into bar shapes; let dry. Dip in sweet chocolate. Makes about 60
bars. |
