Lemon Extract

1 lemon
1/2 cup, vodka
1/2 cup, water

Peel the lemon, using a sharp knife or vegetable peeler or lemon stripper – making sure to scrape off any white “pith” (the pith is bitter).

Finely dice the peel – you will have about 2 tablespoons.

Combine the peel with the vodka and water, and allow to steep as in the recipe above. Store as above.
