Banana-Pecan Muffins
2-1/2 cups flour
1/4 cup whole-wheat flour
3/4 cup sugar
1 teaspoon EACH baking powder and baking soda
1/2 teaspoon salt
1/4 cup rolled oats
3/4 cups chocolate chips
1/2 cup chopped pecans
3 very ripe bananas, pur�ed
3/4 cup butter, melted
3/4 cup milk
1/2 cup firmly packed brown sugar
3 eggs, beaten
Preheat oven to 375 degrees. Grease and flour a muffin pan.
Combine flours, sugar, baking powder, soda and salt. Stir in oats, chocolate
chips and nuts.
In another bowl, whisk together remaining ingredients Add to dry ingredients
until just combined. Do not overmix.
Pour batter into pan. Bake 25 to 30 minutes. |
