Banana Pistachio Muffins Combine flour, baking soda, salt and nutmeg in a bowl. In separate bowl, mix together the mashed bananas, sugar, brown sugar, butter, milk and egg. Mix the banana mixture into the flour mixture, then fold in the nuts. Spoon batter into 12 greased muffin cups; sprinkle with coconut. Bake for about 25 minutes.
