Caramel Pecan Upside Down Muffins Blend brown sugar with the 2 tbl. butter. Evenly pat brown sugar mix into muffin cups, and arrange pecan halves on top of the mixture. In a large bowl, mix the flour, oats, sugar, baking powder, salt and baking soda. Cut the butter into the mixture. Blend the egg with buttermilk, and stir into flour mix just til dampened. Spoon batter into muffin cups, on top of pecan halves. Bake for 15-20 minutes. Makes 12 muffins. |
